Crispy Garlic Shrimp with Chili Oil Noodles

Ingredients

  • 1 poundlarge shrimp (peeled and deveined)
  • 8 ounceegg noodles
  • 8 clovesgarlic
  • ¾ teaspoonred pepper flakes
  • 3 tablespoonsoy sauce
  • 1½ tablespoonrice vinegar
  • 2 tablespoonsesame oil
  • 4 tablespoonneutral oil
  • 4scallions
  • 1lime

    Mince 8 cloves garlic

    Slice 4 scallions into thin rounds

Method

    Bring a large pot of salted water to a boil and cook the egg noodles according to package directions. Drain and set aside.

    While the noodles cook, heat 2 tablespoons of neutral oil in a large skillet over medium-high heat. Add the minced garlic and red pepper flakes, stirring constantly for 30 seconds until fragrant and beginning to brown. Transfer to a small bowl and set aside.

    Add the remaining 2 tablespoons of oil to the skillet over high heat. Once smoking hot, add the shrimp in a single layer. Cook without stirring for 2 minutes until the bottoms are deeply pink, then flip and cook 1 to 2 minutes more until just cooked through. Season with a pinch of salt.

    Return the garlic-chili oil to the skillet with the shrimp. Add the cooked noodles, soy sauce, rice vinegar, and sesame oil. Toss everything together over medium heat for 1 minute until well combined and glossy.

    Divide among bowls and top with sliced scallions and a squeeze of fresh lime juice. Serve immediately.

Spice Tips

For deeper heat, increase red pepper flakes to 1 teaspoon or stir in 1/4 teaspoon of cayenne pepper. Add 1 tablespoon of sriracha or chili-garlic paste for fruity spice. Fresh cilantro or Thai basil stirred in at the end adds brightness to complement the heat.

Don't overcook the shrimp—it goes from tender to rubbery in seconds. If you prefer less heat, reduce the red pepper flakes to 1/2 teaspoon.
