Ingredients

  • 1 poundlarge shrimp (peeled and deveined)
  • 8 ouncesramen noodles or egg noodles
  • 6 clovesgarlic
  • 4 tablespoonbutter
  • 3 tablespoonsoy sauce
  • 1 tablespoonrice vinegar
  • ¼ teaspoonred pepper flakes
  • 4 stalksgreen onion
  • 1 teaspoonsesame oil
  • 1 to tastesalt and black pepper

Prep

  1. 01

Peel and devein 1 pound of shrimp if not pre-deveined.

  2. 02

    Mince 6 garlic cloves.

  3. 03

    Slice 4 green onion stalks.

Method

  1. 01

Bring a large pan of salted water to a boil. Cook noodles according to package directions until just al dente, about 3-4 minutes. Drain well and set aside.

  2. 02

In the same dry pan, melt 2 tablespoons of butter over medium-high heat. Working in two batches if needed, sear shrimp for 1-2 minutes per side until pink and just cooked through. Season with salt and pepper. Transfer to a plate.

  3. 03

Add remaining 2 tablespoons butter to the pan. Add garlic and red pepper flakes; cook for 30 seconds until fragrant.

  4. 04

Return shrimp to the pan. Add cooked noodles, soy sauce, rice vinegar, and sesame oil. Toss everything together over medium heat for 1-2 minutes until heated through and well combined.

  5. 05

Taste and adjust seasoning. Divide among bowls and top with green onion. Serve immediately.

Spice Tips

For more heat, increase red pepper flakes to 1/2 teaspoon or add a pinch of cayenne. A squeeze of fresh lime juice at the end brightens the flavors. For umami depth, stir in 1 teaspoon of fish sauce before serving.
