Garlic Shrimp with Ginger Noodles and Bok Choy

Ingredients

  • 1 poundshrimp (large, peeled and deveined)
  • 8 ouncesfresh egg noodles
  • 1 poundbok choy
  • 4 clovesgarlic
  • 1 tablespoonfresh ginger
  • 1lime
  • 3 tablespoonsoy sauce
  • 1 tablespoonsesame oil
  • 1 tablespoonrice vinegar
  • 2 tablespoonvegetable oil
  • ¼ teaspoonred pepper flakes
  • 3scallions
  • 1 teaspoonsesame seeds (optional)

Prep

    Peel and devein 1 pound large shrimp if not already done.

    Mince 4 cloves garlic and grate 1 tablespoon fresh ginger.

    Slice 3 scallions into thin rounds.

Method

    Bring a large pot of salted water to a boil. Cook the egg noodles according to package directions until tender. Drain and rinse under cold water; set aside.

    Cut the bok choy in half lengthwise. Heat 1 tablespoon vegetable oil in a large skillet over medium-high heat. Add the bok choy cut-side down and cook for 3–4 minutes until golden. Flip, add 2 tablespoons water, cover, and cook for another 2 minutes. Transfer to a serving platter.

    In the same skillet, heat the remaining 1 tablespoon vegetable oil over medium-high heat. Add the shrimp and cook for 2 minutes until they just begin to turn pink. Add the garlic, ginger, and red pepper flakes, stirring constantly for 30 seconds until fragrant.

    Add the cooked noodles to the skillet along with the soy sauce, sesame oil, and rice vinegar. Toss everything together for 1–2 minutes until the noodles are warmed through and evenly coated. Squeeze the lime juice over the top.

    Divide the noodles and shrimp among bowls. Top with the bok choy and scatter with sliced scallions and sesame seeds if using. Serve immediately.

Spice Tips

For warmth, increase the red pepper flakes to 1/2 teaspoon or finish with a drizzle of chili oil. For complexity, add 1 teaspoon Sriracha or a pinch of white pepper to the noodle toss.

This dish comes together in about 20 minutes. For extra brightness, add a splash of fresh lime juice at the table. Shrimp can be swapped for firm white fish, thinly sliced chicken breast, or tofu.
