Fiery White Beans with Chorizo and Lime

Ingredients

  • 8 ounceschorizo (Spanish-style, removed from casing)
  • 1 mediumyellow onion
  • 4 clovesgarlic
  • 2 15-ounce canscanned white beans
  • 1 14.5-ounce candiced tomatoes with green chiles
  • 1 cupchicken broth
  • 1 teaspoonsmoked paprika
  • ¼ teaspooncayenne pepper
  • 1 wholelime
  • 1 tablespoonolive oil
  • 1 to tastesalt and black pepper
  • ¼ cupfresh cilantro (loosely packed)

    Dice 1 medium yellow onion.

    Mince 4 cloves garlic.

    Drain and rinse 2 cans (15-ounce each) white beans.

Method

    Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add chorizo (removed from casing), breaking it into bite-sized pieces. Cook for 5–6 minutes, stirring occasionally, until browned and crispy. Transfer to a paper-towel-lined plate.

    In the same skillet, add minced garlic and cook for 30 seconds until fragrant. Add diced onion and sauté for 3–4 minutes until softened.

    Stir in 1 teaspoon smoked paprika and 1/4 teaspoon cayenne. Cook for 1 minute until the spices bloom.

    Pour in 1 cup chicken broth and scrape up any browned bits from the bottom of the skillet. Add the two 15-ounce cans white beans (drained and rinsed) and 1 can diced tomatoes with green chiles (with liquid). Bring to a simmer.

    Return chorizo to the skillet and simmer for 8–10 minutes until the flavors meld and the broth reduces slightly. Season with salt and black pepper to taste.

    Squeeze juice from 1 lime directly into the skillet and stir. Taste and adjust heat or lime to preference. Serve hot, garnished with fresh cilantro.

Spice Tips

For serious heat, increase cayenne to 1/2 teaspoon or add a pinch of ghost pepper. For milder spice, reduce cayenne to 1/8 teaspoon or omit entirely—the chorizo and tomato-chile blend still deliver flavor. A fresh jalapeño sliced into the pot adds textural heat without overwhelming the dish.

Serves as a hearty bowl over rice or with crusty bread. Leftovers keep for 3 days refrigerated and taste even better the next day as flavors deepen.
