Ingredients

  • 3 tablespoonolive oil
  • 4 clovesgarlic
  • 8 leavesfresh sage
  • 2 canwhite beans (15 oz each, drained and rinsed)
  • ¾ cupvegetable broth
  • 1lemon
  • ¼ teaspoonred pepper flakes
  • ½ teaspoonkosher salt
  • ¼ teaspoonblack pepper

Prep

  1. 01

    Mince 4 cloves garlic

  2. 02

    Zest and halve 1 lemon

Method

  1. 01

Heat 2 tablespoons olive oil in a large skillet over medium heat. Add 8 sage leaves and cook for 1–2 minutes, stirring gently, until fragrant and edges begin to brown. Transfer sage to a paper towel.

  2. 02

Add remaining 1 tablespoon olive oil to the same skillet. Add minced garlic and cook for 30 seconds until fragrant, stirring constantly.

  3. 03

Pour in drained white beans and vegetable broth. Stir, bring to a simmer, and cook for 5 minutes, allowing flavors to meld.

  4. 04

Zest the lemon into the beans, then squeeze in the juice (about 2–3 tablespoons). Add red pepper flakes, salt, and black pepper. Stir well.

  5. 05

Simmer for another 3–4 minutes until beans are heated through and broth has reduced slightly.

  6. 06

Taste and adjust seasoning as needed. Transfer to bowls and top with crispy sage leaves before serving.

Spice Tips

For deeper heat, increase red pepper flakes to 1/2 teaspoon or add a pinch of cayenne. A handful of fresh parsley stirred in at the end adds herbaceous brightness. If you like earthiness, a small pinch of cumin complements the lemon and sage.
