White Beans with Garlic and Rosemary

Ingredients

  • 3 tablespoonolive oil
  • 6 clovegarlic
  • 2 sprigfresh rosemary
  • 2 can (15 oz each)canned white beans (drained and rinsed)
  • 1 cupvegetable broth
  • ·salt
  • ·black pepper
  • ¼ teaspoonred pepper flakes (optional)

Method

    Heat 3 tablespoons olive oil in a large skillet over medium heat.

    Add 6 minced garlic cloves and 2 sprigs fresh rosemary. Cook for 1 minute, stirring frequently, until fragrant.

    Add the drained white beans and 1 cup vegetable broth. Stir to combine.

    Bring to a simmer and cook for 8 to 10 minutes, until the beans are heated through and the broth has reduced slightly.

    Remove the rosemary sprigs. Season to taste with salt, black pepper, and a pinch of red pepper flakes if desired. Serve warm.

Spice Tips

The red pepper flakes add a gentle warmth without heat. For deeper flavor, try a small pinch of smoked paprika or a squeeze of fresh lemon juice at the end. A grating of Parmesan is also lovely stirred in just before serving.
