Asparagus with Garlic, Lemon & Crispy Breadcrumbs

Ingredients

  • 1½ poundsasparagus
  • 3 tablespoonolive oil
  • 4 clovegarlic
  • 1lemon
  • ½ cuppanko breadcrumbs
  • ·salt
  • ·black pepper

Prep

    Trim the woody bottom 1-2 inches off the asparagus stalks and rinse.

    Zest the lemon if you like extra brightness, and set aside to sprinkle over the finished dish (optional).

Method

    Heat 2 tablespoons olive oil in a large skillet over medium heat. Add 1/2 cup panko breadcrumbs and cook, stirring often, for 3-4 minutes until golden and fragrant. Transfer to a small bowl and set aside.

    Add 1 tablespoon olive oil to the same skillet and increase heat to medium-high. Thinly slice 4 garlic cloves and add to the pan. Cook for 30 seconds until fragrant, then add the asparagus in a single layer.

    Cook the asparagus for 5-7 minutes, shaking the pan occasionally, until tender-crisp and lightly browned in spots. Season with salt and pepper to taste.

    Remove from heat. Juice the lemon (about 2-3 tablespoons) and drizzle over the asparagus. Sprinkle with the crispy breadcrumbs and serve immediately.

Spice Tips

For a hint of warmth, add 1/4 teaspoon red pepper flakes to the garlic in step 2. To deepen the umami, dust the breadcrumbs with 1/4 teaspoon smoked paprika or grated Parmesan before toasting.

Make-ahead: trim and rinse asparagus up to 2 hours ahead; store in a damp paper towel in the fridge. The breadcrumbs can be made 1 day ahead and kept in an airtight container.
