Charred Asparagus with Crispy Garlic and Chili Oil

Ingredients

  • 1 poundasparagus
  • 3 tablespoonolive oil
  • 6 clovesgarlic
  • ½ teaspoonred pepper flakes
  • ·kosher salt
  • ·black pepper
  • 1lemon
  • ½ ounceparmesan cheese (wedge for shaving)

Prep

    Trim the woody ends from 1 pound asparagus (bend each spear until it snaps naturally at the tender joint).

    Thinly slice 6 garlic cloves.

Method

    Heat 2 tablespoons olive oil in a large skillet over medium-high heat until shimmering.

    Working in batches if needed, add asparagus in a single layer and cook for 4–5 minutes without stirring, until the undersides are deeply charred. Shake the pan, then cook another 2 minutes until tender and speckled. Season with salt and pepper. Transfer to a serving platter.

    Lower heat to medium. Add remaining 1 tablespoon oil and the garlic slices to the same skillet. Cook, stirring constantly, for 1–2 minutes until golden and fragrant (watch closely so they don't burn). Stir in red pepper flakes and cook 15 seconds more.

    Pour the garlicky, spiced oil over the charred asparagus. Squeeze fresh lemon juice over the top, shave parmesan over it with a vegetable peeler, and serve hot.

Spice Tips

For more heat, increase red pepper flakes to 3/4 teaspoon or add a pinch of cayenne. For a smoky kick, use smoked paprika (1/4 teaspoon) alongside the chili. A dash of hot sauce or sriracha drizzled on top at the end adds fresh peppery depth.
