Garlic Butter Asparagus with Crispy Panko and Lemon

Ingredients

  • 1½ poundsasparagus
  • 3 tablespoonolive oil
  • 4 clovesgarlic
  • ½ cuppanko breadcrumbs
  • 2 tablespoonbutter
  • 1lemon
  • ·kosher salt
  • ·black pepper

Prep

    Trim the woody ends from asparagus (about 2 inches from the bottom) and rinse.

    Mince 4 cloves garlic.

Method

    Heat 2 tablespoons olive oil in a large skillet over medium-high heat.

    Add panko breadcrumbs and toast for 2-3 minutes, stirring frequently, until golden and fragrant. Transfer to a small bowl and set aside.

    In the same skillet, add 1 tablespoon olive oil and the minced garlic. Cook for 30 seconds until fragrant.

    Add asparagus spears in a single layer, season with salt and pepper, and cook for 5-6 minutes, stirring occasionally, until bright green and tender-crisp.

    Stir in butter until melted, then squeeze the juice of 1 lemon over the asparagus.

    Transfer to a serving plate and top with the crispy panko crumbs. Serve immediately.

Spice Tips

For warmth, add a pinch of red pepper flakes to the garlic in step 3. For herbaceous depth, scatter fresh thyme or dill over the finished dish.
