Garlic Butter Asparagus with Crispy Panko and Lemon

- 3 tablespoonolive oil
- 4 clovesgarlic
- ½ cuppanko breadcrumbs
- 2 tablespoonbutter

Prep

Trim the woody ends from asparagus (about 2 inches from the bottom) and rinse.

Mince 4 cloves garlic.
Method

Heat 2 tablespoons olive oil in a large skillet over medium-high heat.

Add panko breadcrumbs and toast for 2-3 minutes, stirring frequently, until golden and fragrant. Transfer to a small bowl and set aside.

In the same skillet, add 1 tablespoon olive oil and the minced garlic. Cook for 30 seconds until fragrant.

Add asparagus spears in a single layer, season with salt and pepper, and cook for 5-6 minutes, stirring occasionally, until bright green and tender-crisp.

Stir in butter until melted, then squeeze the juice of 1 lemon over the asparagus.
