Garlicky Asparagus and Crispy Chickpea Skillet
Ingredients
- 1 poundasparagus
- 1 can (15 oz)canned chickpeas (drained and rinsed)
- 4 clovesgarlic
- 3 tablespoonolive oil
- 1lemon
- ½ teaspoonpaprika

Trim the tough bottom ends from 1 pound asparagus (snap them where they naturally break or cut 2 inches from the base).

Mince 4 cloves garlic.
Method

Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add the drained chickpeas and cook for 5–7 minutes, stirring occasionally, until golden and beginning to crisp. Season with salt and paprika, then transfer to a plate.

In the same skillet, add the remaining 1 tablespoon olive oil. Add minced garlic and cook for 30 seconds until fragrant, stirring constantly.

Add the trimmed asparagus spears, season with salt and pepper, and sauté for 6–8 minutes, stirring every couple of minutes, until tender and lightly browned.

Return the chickpeas to the skillet and toss everything together over the heat for 1 minute. Squeeze the juice of 1 lemon over the top and stir.

Taste and adjust salt, pepper, and lemon juice. Serve warm, with red pepper flakes scattered on top if you'd like a little heat.
Spice Tips
For extra warmth, increase the red pepper flakes to 1/2 teaspoon or add a generous pinch of cayenne. A splash of white wine or a dash of balsamic vinegar brightens the finish. Fresh herbs like parsley or dill scattered over the top add a fresh note.
This is hearty enough to eat on its own, or serve alongside crusty bread or rice to soak up the garlicky oil. The chickpeas give it substance and protein, making it a satisfying meatless dinner.
