Avocado Toast with Charred Tomato & Za'atar
Ingredients

- 2 mediumtomato
- 2 tablespoonolive oil
- ½ teaspoonza'atar
- ½lemon
- ·fleur de sel or kosher salt

Cut 2 medium tomatoes in half lengthwise.

Cut 1 lemon in half.

Heat 1 tablespoon olive oil in a skillet over medium-high heat. Halve the tomatoes and place cut-side down in the pan. Cook for 3–4 minutes until the cut surfaces are deeply charred and blistered, then flip and cook 1 minute more. Transfer to a plate and season with a pinch of salt.

Toast the bread until golden and crispy, about 2–3 minutes in a toaster or in the same skillet over medium heat.

Cut the avocado in half, remove the pit, and scoop the flesh into a small bowl. Mash lightly with a fork, leaving it slightly chunky. Squeeze the juice from the lemon half over it and season with salt and pepper.

Spread the mashed avocado evenly onto the warm toast. Top with the charred tomatoes, drizzle with the remaining 1 tablespoon olive oil, and dust generously with za'atar. Serve immediately.
Spice Tips
Za'atar brings a tangy, herbal warmth; if you don't have it, swap in 1/4 teaspoon sumac mixed with a pinch of dried oregano, or simply use flaky sea salt and cracked pepper. A small pinch of red pepper flakes scattered on top adds gentle heat without overpowering the fresh avocado.
