Avocado Toast with Crispy Chickpeas and Lime Drizzle

Ingredients

  • 2 slicessourdough bread
  • 1ripe avocado
  • 1 can (15 oz)canned chickpeas (drained and rinsed)
  • 2 tablespoonolive oil
  • 1lime
  • 1garlic clove
  • ¼ teaspoonred pepper flakes
  • ½ teaspoonsea salt
  • ¼ teaspoonblack pepper
  • ¼ cupcilantro

    Mince 1 garlic clove.

    Chop 1/4 cup cilantro.

Method

    Toss drained chickpeas with 1 tablespoon olive oil, minced garlic, red pepper flakes, and salt in a small bowl. Spread on a baking sheet in a single layer.

    Roast at 425°F for 18–22 minutes, stirring halfway, until golden and crispy.

    Meanwhile, toast the bread slices until golden and crisp.

    Cut the avocado in half, remove the pit, and scoop the flesh onto the toast. Lightly mash with the back of a fork, leaving some texture.

    Divide roasted chickpeas between the toast slices and season with black pepper.

    Cut the lime in half and squeeze juice over both slices. Scatter cilantro on top and serve immediately.

Spice Tips

For a spicy kick, increase the red pepper flakes to 1/2 teaspoon or add a pinch of cayenne. A dash of hot sauce drizzled on top brings extra heat and tang. For deeper flavor, try smoked paprika mixed with the chickpeas.
