- 4 ounceschorizo (Mexican-style, fresh)
- 2 slicesbread (sourdough or thick-cut)
- 1avocado
- 1lime
- ¼ mediumred onion
- 1serrano chile
- 1 tablespoonolive oil
- ·fleur de sel or sea salt
- ·black pepper
Prep
- 01
Slice red onion into thin rings or half-moons.
- 02
Halve the lime and slice the serrano chile into thin rings, removing seeds if you prefer less heat.
Method
- 01
Heat a skillet over medium-high heat. Remove chorizo from its casing and crumble it into the pan. Cook for 4–5 minutes, stirring often, until browned and crispy at the edges. Transfer to a plate lined with paper towels.
- 02
In the same skillet, char the lime halves cut-side down for 2–3 minutes until caramelized and juicy. Set aside.
- 03
Toast the bread slices in the skillet (or a toaster) until golden and crisp, about 2–3 minutes.
- 04
Cut the avocado in half, remove the pit, and scoop onto the hot toast. Gently mash with a fork to your desired texture (chunky or smooth).
- 05
Top with the crispy chorizo, a pinch of salt and pepper, and the red onion. Squeeze charred lime over the top and scatter serrano slices over it all.
- 06
Drizzle with olive oil and serve immediately.
Spice Tips
The serrano brings live heat; start with a few slices and add more to taste. For deeper spice warmth, use chorizo labeled 'picante.' If serrano is hard to find, substitute jalapeño (milder) or a pinch of cayenne (0.1 teaspoon). The charred lime's slight bitterness balances the richness beautifully.
