Cabbage & White Bean Skillet with Lemon
Ingredients
- 2 tablespoonolive oil
- 1yellow onion
- 3 clovegarlic
- ½ medium headgreen cabbage
- 1 can (15 oz)white beans
- 1 cupvegetable broth
- 1lemon

- 1 teaspoonfresh thyme (or 1/4 teaspoon dried)

Dice 1 yellow onion.

Mince 3 cloves garlic.

Chop about 6 cups of green cabbage (roughly half a medium head).
Method

Heat 2 tablespoons olive oil in a large skillet over medium heat. Add the diced onion and cook for 3-4 minutes until softened.

Stir in the minced garlic and cook for 1 minute until fragrant.

Add the chopped cabbage and 1 cup vegetable broth. Stir, then cover and cook for 6-8 minutes, stirring halfway through, until the cabbage is just tender.

Drain and rinse the white beans, then add them to the skillet. Stir in 1 teaspoon fresh thyme (or 1/4 teaspoon dried). Cook uncovered for 2-3 minutes until the beans are warmed through.

Squeeze the lemon juice over the skillet and season with salt and pepper to taste. Stir and serve immediately.
Spice Tips
For warmth, stir in 1/4 teaspoon red pepper flakes with the garlic. Add a pinch of smoked paprika for subtle depth, or finish with fresh dill or parsley if you want extra herbaceousness.
