Crispy Cabbage & Bacon Hash with Fried Eggs

Ingredients

  • 6 slicesbacon
  • ½ headgreen cabbage
  • 1 mediumyellow onion
  • 3 clovesgarlic
  • 1 tablespoonolive oil
  • ·salt
  • ·black pepper
  • 4 largeeggs

Prep

    Chop half a head of green cabbage into rough 1-inch pieces.

    Dice 1 medium yellow onion.

    Mince 3 cloves garlic.

Method

    Cook bacon in a large skillet over medium heat until crispy, about 8 minutes. Transfer to a paper towel and chop roughly.

    Pour off all but 2 tablespoons of bacon fat from the skillet.

    Add the olive oil and heat over medium-high. Add the onion, stirring often, until softened and lightly golden, about 4 minutes.

    Add the garlic and cook for 30 seconds until fragrant.

    Add the cabbage, season with salt and pepper, and stir well. Cook, stirring occasionally, for 8–10 minutes until the cabbage is tender and the edges turn golden and crispy.

    Return the bacon to the skillet and stir to combine.

    Make 4 small wells in the cabbage mixture. Crack an egg into each well, cover the skillet with a lid or foil, and cook over medium heat for 3–5 minutes until the egg whites are set and yolks reach your desired doneness.

    Taste and adjust salt and pepper. Serve directly from the skillet.

Spice Tips

For warmth, stir in 1/2 teaspoon smoked paprika with the cabbage. A pinch of red pepper flakes adds gentle heat. A splash of hot sauce or a sprinkle of fresh cilantro brightens it at the end.
