  • 3 tablespoonolive oil
  • ·salt
  • ·black pepper
  • ¼ teaspoonred pepper flakes

Prep

  1. 01

Slice 1 small head of green cabbage into roughly 1/2-inch-wide pieces (about 6 cups).

  2. 02

    Mince 4 cloves garlic.

Method

  1. 01

Heat 3 tablespoons olive oil in a large skillet over medium-high heat.

  2. 02

Once oil is shimmering, add minced garlic and cook for 30 seconds until fragrant.

  3. 03

Add sliced cabbage to the pan, season with salt and black pepper, and cook without stirring for 3 to 4 minutes until the bottom begins to brown and crisp.

  4. 04

Stir the cabbage, then cook for another 3 to 4 minutes, tossing occasionally, until the leaves are tender with crispy, caramelized edges.

  5. 05

Remove from heat, squeeze fresh lime juice over the cabbage, sprinkle with red pepper flakes, and taste for seasoning. Add more salt or pepper as needed.

  6. 06

Serve warm, while the cabbage still has some crunch.

Spice Tips

For warmth, increase red pepper flakes to 1/2 teaspoon or add a pinch of smoked paprika. A dash of soy sauce or fish sauce adds savory depth. Fresh cilantro or mint scattered on top brings brightness.

This dish works as a light side or mixed into grain bowls. Leftovers keep for 2 days in an airtight container and can be reheated gently or eaten cold.
