Quick Cabbage Slaw with Toasted Sesame and Lime

Ingredients

  • ½ headgreen cabbage
  • 2carrots
  • ·sesame seeds
  • 1lime
  • 1 tablespoonfish sauce
  • 1 tablespoonhoney
  • 1 tablespoonneutral oil
  • 3scallions

Prep

    Thinly slice 1/2 head of green cabbage.

  2. 02

    Grate or slice 2 carrots into thin matchsticks.

  3. 03

    Slice 3 scallions, separating white and light green parts from darker greens.

Method

    Toast the sesame seeds in a dry skillet over medium heat for 2-3 minutes, shaking occasionally, until fragrant and lightly golden. Transfer to a small bowl.

    In a large bowl, whisk together the juice of 1 lime, fish sauce, honey, and neutral oil until the honey dissolves.

    Thinly slice the green cabbage and add to the dressing. Grate the carrots or slice them into thin matchsticks and add to the bowl. Toss well and let sit for 5 minutes to soften slightly.

    Top with the toasted sesame seeds and sliced scallions. Serve immediately or at room temperature.

Spice Tips

Add a pinch of red pepper flakes or a small diced fresh chili for heat. A splash of rice vinegar can deepen the tang. Cilantro or fresh basil stirred in at the end adds an herbal brightness.
