Tuna & White Bean Skillet with Garlic Toast
Ingredients

- 2 cans (5 oz each)canned tuna in water
- ½ cupchicken broth

- ¼ teaspoonblack pepper
- 1 loafcrusty bread

Dice 1 yellow onion into small pieces.

Mince 3 cloves garlic.
Method

Heat 2 tablespoons olive oil in a large skillet over medium heat.

Add the diced onion and cook for 3-4 minutes, stirring occasionally, until softened.

Stir in the minced garlic and cook for 1 minute until fragrant.

Pour in the canned tomatoes (with juice), white beans (drained and rinsed), chicken broth, oregano, red pepper flakes, salt, and black pepper. Stir well.

Bring the mixture to a simmer and cook for 5 minutes to meld the flavors.

Drain the tuna and gently fold it into the skillet. Simmer for 2 more minutes until heated through.

Toast thick slices of crusty bread and rub lightly with garlic if desired. Serve alongside the warm skillet in bowls.
Spice Tips
For deeper warmth, add 1/2 teaspoon smoked paprika with the tomatoes. For more heat, increase red pepper flakes to 1/2 teaspoon or stir in a pinch of cayenne. A squeeze of fresh lemon juice at the end brightens all the flavors.
This is naturally filling and improves with a minute of sitting. For extra coziness, finish with a drizzle of good olive oil and fresh parsley. Pairs beautifully with a crisp white wine or sparkling water with lemon.
