Bacon-Wrapped Chicken with Crispy Sage and Garlic
Ingredients
- 6 slicesbacon
- 2 poundschicken breasts (boneless, skinless)
- 4 clovesgarlic
- 8 leavesfresh sage
- 1 tablespoonolive oil
- 1 teaspoonkosher salt
- ½ teaspoonblack pepper
- 1 wholelemon
Method
- 01
Pat 2 pounds chicken breasts dry with paper towels. Season both sides with 1 teaspoon salt and 1/2 teaspoon black pepper.
- 02
Wrap 2 chicken breasts tightly with 3 slices bacon each, overlapping slightly so the bacon adheres to the chicken. Secure with toothpicks if needed.
- 03
Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Once shimmering, place bacon-wrapped chicken in the pan and sear for 5–6 minutes per side, until bacon is crispy and a meat thermometer reads 165°F in the thickest part. Transfer to a plate.
- 04
In the same skillet, reduce heat to medium. Add 4 minced garlic cloves and 8 sage leaves, stirring constantly for 30 seconds until fragrant.
- 05
Return chicken to the skillet, spoon the sage-garlic oil over top, and cook for 1 minute. Squeeze fresh lemon juice over the chicken and serve immediately.
Spice Tips
For subtle heat, add a pinch of red pepper flakes to the sage and garlic in step 4. Thyme or rosemary work just as well as sage if you prefer.
The bacon renders as the chicken cooks, so you get crispy pork and moist chicken in one step. For a vegetable side, roast broccoli or green beans in the oven while the skillet works.
