Garlic-Ginger Chicken with Charred Broccoli

Ingredients

  • 1½ poundschicken breast
  • 1 poundbroccoli
  • 3 tablespoonolive oil
  • 4 clovegarlic
  • 1 tablespoonfresh ginger
  • 3 tablespoonsoy sauce
  • 1 tablespoonrice vinegar
  • 1 teaspoonhoney
  • 1 teaspoonsesame oil
  • ¼ teaspoonred pepper flakes
  • 1 wholelime
  • 2 wholescallion

Prep

    Mince 4 cloves garlic.

    Mince 1 tablespoon fresh ginger.

    Cut broccoli into bite-sized florets.

    Slice 2 scallions into thin rings.

Method

    Cut chicken breasts into 1-inch chunks. Pat dry with paper towels and season with salt and pepper.

    Heat 1 1/2 tablespoons olive oil in a large skillet over medium-high heat. Working in batches if needed, cook chicken until golden on all sides and cooked through, about 8 minutes total. Transfer to a plate.

    Add remaining 1 1/2 tablespoons olive oil to the same skillet. Add broccoli florets in a single layer and let them sit undisturbed for 3 minutes until charred underneath. Stir and cook another 3 to 4 minutes until tender-crisp.

    Add minced garlic and ginger to the broccoli, stirring constantly for 30 seconds until fragrant.

    Pour in soy sauce, rice vinegar, honey, and sesame oil. Return chicken to the pan along with red pepper flakes and toss everything to coat. Warm through for 1 to 2 minutes.

    Squeeze lime juice over the dish and scatter scallions on top. Serve immediately over steamed rice or with rice on the side.

Spice Tips

For more heat, increase red pepper flakes to 1/2 teaspoon or add a small diced fresh chili. For deeper umami, stir in 1 teaspoon fish sauce. A splash of rice wine adds extra aromatic complexity.

This comes together in under 30 minutes. Serve with jasmine or brown rice to soak up the flavorful sauce. Leftovers reheat well in a skillet over medium heat.
