Creamy Garlic Chicken and Green Beans with Thyme

Ingredients

  • 1½ poundschicken breast (boneless, skinless)
  • 1 poundgreen beans
  • 5 clovesgarlic
  • 3 tablespoonbutter
  • ¾ cupchicken broth
  • ½ cupheavy cream
  • 2 teaspoonfresh thyme
  • ·salt
  • ·black pepper
  • 1 tablespoonolive oil

Prep

    Trim the stem end from 1 pound green beans.

    Mince 5 cloves garlic.

Method

    Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Season chicken breasts with salt and pepper, then sear for 6-7 minutes per side until golden brown. Transfer to a plate.

    In the same skillet, melt 3 tablespoons butter over medium heat. Add minced garlic and cook for 1 minute until fragrant.

    Pour in 3/4 cup chicken broth, scraping up any browned bits from the pan. Return chicken to the skillet along with 1 pound green beans.

    Simmer for 8-10 minutes, stirring occasionally, until green beans are tender-crisp and chicken is cooked through (internal temperature 165°F).

    Stir in 1/2 cup heavy cream and 2 teaspoons fresh thyme. Simmer for 2 more minutes until sauce thickens slightly. Taste and adjust salt and pepper as needed. Serve over rice or egg noodles if desired.

Spice Tips

For a hint of brightness, add 1 teaspoon Dijon mustard with the cream. A pinch of red pepper flakes brings subtle heat, or freshly grated nutmeg adds warmth and depth.

This recipe works beautifully over buttered egg noodles, rice, or with crusty bread for soaking up the sauce. Leftovers keep refrigerated for up to 3 days.
