Juice 1 lemon.
Method
- 01
Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Season chicken breasts on both sides with salt and pepper. Sear for 6-7 minutes per side until golden and cooked through (165°F at the thickest part). Transfer to a plate.

In the same skillet, add 1 tablespoon olive oil and the green beans. Cook for 4-5 minutes, stirring occasionally, until they're tender-crisp and lightly browned. Season with salt and pepper. Transfer to a plate.

Reduce heat to medium. Add 2 tablespoons butter and the minced garlic to the skillet. Cook for 1-2 minutes until fragrant and golden.
- 04
Pour in the white wine and scrape up any browned bits from the pan bottom. Simmer for 2-3 minutes until reduced by half.
- 05
Stir in the remaining 1 tablespoon butter and juice from 1 lemon. Return chicken and green beans to the skillet, toss gently to coat, and warm through (about 1 minute). Taste and adjust seasoning.
- 06
Serve immediately, spooning sauce over chicken and beans.
Spice Tips
For warmth, add a pinch of red pepper flakes when cooking the garlic. A small handful of fresh tarragon or dill stirred in at the end adds herbal brightness. Finish with fleur de sel if you want a crisp top note.
