- 1 poundgreen beans
- 4 clovegarlic
- 1lemon
- 3 tablespoonolive oil
- ½ teaspoonsalt
- ¼ teaspoonblack pepper
- ½ cupdry white wine or chicken broth
Prep
- 01
Trim the stem ends from 1 pound green beans.
- 02
Mince 4 cloves garlic.
Method
- 01
Pat chicken breasts dry with paper towels. Season both sides generously with salt and pepper.
- 02
Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Once shimmering, add chicken and sear for 6–7 minutes per side until golden and cooked through (internal temp 165°F). Transfer to a plate.
- 03
In the same skillet, add remaining 1 tablespoon olive oil. Add green beans and cook for 4–5 minutes, stirring occasionally, until bright green and tender-crisp.
- 04
Add minced garlic to the green beans and cook for 1 minute until fragrant.
- 05
Pour in wine or broth and squeeze half the lemon juice into the pan. Simmer for 2 minutes, scraping up any browned bits from the bottom.
- 06
Return chicken to the skillet to warm through. Taste and adjust seasoning. Serve with a wedge of remaining lemon.
Spice Tips
For warmth, add a pinch of red pepper flakes when cooking the garlic. Fresh thyme or dill stirred in at the end adds bright herbaceous notes. A touch of Dijon mustard whisked into the pan liquid adds subtle depth.
