Lemon Chicken with Crispy Garlic Noodles
Ingredients

Pat chicken dry and season both sides with 1/2 teaspoon salt and 1/4 teaspoon black pepper.

Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add chicken and cook 5–6 minutes per side until golden and cooked through (internal temperature 165°F). Transfer to a cutting board.

In the same skillet, add remaining 1 tablespoon olive oil and the minced garlic. Cook 1–2 minutes until fragrant and just starting to turn golden.

Pour in chicken broth and juice from 1 lemon. Bring to a simmer, scraping up any browned bits from the pan. Season with a pinch of salt and pepper. Simmer 2 minutes.

While the sauce simmers, cook egg noodles according to package directions. Drain and set aside.

Slice the cooked chicken into bite-sized pieces. Return to the skillet along with the cooked noodles and spinach. Toss until spinach wilts, about 1 minute.

Taste and adjust seasoning with more salt, pepper, or lemon juice. Divide into bowls and top with fresh parsley and zest from the remaining lemon.
Spice Tips
For subtle heat, add 1/4 teaspoon red pepper flakes with the garlic. A pinch of smoked paprika deepens the savory notes. Fresh thyme or dill brightens the finish if you have them on hand.
This recipe comes together in about 20 minutes. If you prefer more body, toss in a handful of cherry tomatoes in the last step, or stir in 2 tablespoons of mascarpone or crème fraîche into the warm sauce for richness.
