Chicken and Peppers with Garlic Butter Toast

Ingredients

  • 1½ poundchicken breast (boneless, skinless)
  • 3 wholebell pepper (mixed colors (red, yellow, orange))
  • 1 wholeyellow onion (medium)
  • 4 clovegarlic
  • 3 tablespoonolive oil
  • ¾ cupchicken broth
  • 2 tablespoonbutter
  • ½ teaspoonsalt
  • ¼ teaspoonblack pepper
  • ½ teaspoondried oregano
  • 4 slicebread (crusty or sourdough)

Prep

    Slice 1 medium yellow onion into thick rings or large chunks.

    Core and slice 3 bell peppers into thick rings or 2-inch strips.

    Mince 4 garlic cloves; cut 1 garlic clove in half for toasting later.

Method

    Pat chicken dry with paper towels. Season both sides with 1/4 teaspoon salt and 1/8 teaspoon black pepper.

    Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Once shimmering, add chicken and cook 6 minutes per side until golden and cooked through (internal temp 165°F). Transfer to a plate.

    Add remaining 1 tablespoon oil to the skillet. Add onions and cook 3 minutes until softened and starting to brown. Add garlic and cook 1 minute until fragrant.

    Add peppers and cook 4 minutes, stirring occasionally. Pour in chicken broth and sprinkle with oregano, 1/4 teaspoon salt, and remaining black pepper. Bring to a simmer.

    Slice the cooked chicken into strips and return to the skillet. Simmer 2 minutes until heated through. Stir in butter until melted and glossy.

    While the chicken finishes, toast bread until golden. Rub the warm toast with the garlic clove halves (you cut this during prep), then brush lightly with olive oil.

    Divide chicken and peppers among bowls or plates. Pour pan sauce over top and serve with garlic butter toast on the side.

Spice Tips

For warmth without heat, add 1/2 teaspoon smoked paprika along with the oregano. For gentle spice, add 1/4 teaspoon red pepper flakes. A splash of balsamic vinegar (1 tablespoon) stirred in at the end adds subtle sweetness and depth.

For a lighter version, skip the butter in step 5 and finish with a squeeze of fresh lemon juice instead. Serve with rice or crusty bread to soak up the pan sauce.
