Crispy Chicken and Rice with Chile-Lime Heat
Ingredients

- 2 wholefresh Thai chilies

Dice 1 medium yellow onion.

Mince 4 cloves garlic.

Cut 2 fresh Thai chilies in half and remove most seeds for a milder kick, or leave whole for serious heat.

Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Season chicken thighs generously with salt and pepper. Once oil is hot, place chicken skin-side down and cook for 5–6 minutes until the skin is golden and crispy, then flip and cook another 4–5 minutes. Transfer to a plate.

Add remaining 1 tablespoon oil to the same skillet. Cook diced onion and minced garlic over medium heat for 2–3 minutes until fragrant and softened.

Stir in rice and toast for 1–2 minutes, stirring frequently, until lightly golden.

Pour in chicken broth, add the whole Thai chilies, and nestle the chicken thighs back into the pan. Bring to a boil, then reduce heat to low, cover, and simmer for 18–20 minutes until rice is tender and liquid is absorbed.

Stir in fish sauce and juice from 2 limes. Taste and adjust with more salt, lime, or fish sauce as needed. Discard whole chilies or leave them for heat-seekers. Serve hot.
Spice Tips
For extra depth, add 1/2 teaspoon smoked paprika or a pinch of cumin to the rice. If you want tamer heat, remove all chile seeds and use just one. For a cooling finish, top with fresh cilantro and an extra lime wedge—the acidity balances the chile perfectly.
Fish sauce is crucial—it adds umami depth that anchors the spice. If you can't find it, substitute soy sauce, though the flavor will shift slightly. Thai chilies pack real heat; start with one and add the second if you like serious fire. Leftovers keep 3 days refrigerated.
