Crispy Chicken Thighs with Lime-Ginger Sweet Potato
Ingredients
- 4chicken thighs (bone-in, skin-on)
- 2 mediumsweet potato
- 2lime
- 1 tablespoonfresh ginger
- 3 clovesgarlic
- 3 tablespoonolive oil
- ¾ teaspoonkosher salt
- ¼ teaspoonblack pepper
- ¼ cupcilantro
- 2scallion
Prep

Peel and cut 2 medium sweet potatoes into 1/2-inch cubes.

Mince 3 cloves garlic.

Grate or finely mince 1 tablespoon fresh ginger.

Chop 1/4 cup cilantro.

Slice 2 scallions on the bias.
Method

Heat 1 1/2 tablespoons olive oil in a large skillet over medium-high heat. Season chicken thighs with 1/2 teaspoon salt and 1/8 teaspoon black pepper on both sides.

Place chicken skin-side down in the hot skillet. Cook for 6–7 minutes until the skin is golden and crispy, then flip and cook another 5–6 minutes until cooked through (internal temperature 165°F). Transfer to a plate.

In the same skillet, add remaining 1 1/2 tablespoons olive oil and the sweet potato cubes. Cook over medium-high heat for 8–10 minutes, stirring occasionally, until tender and lightly caramelized.

Add the ginger and garlic to the pan and cook for 1 minute until fragrant.

Squeeze the juice from both limes into the pan and toss gently. Return the chicken to the skillet to warm through.

Transfer to a serving platter or bowls. Top with cilantro and sliced scallion.
Spice Tips
For warmth, add a pinch of cayenne or red pepper flakes to the lime dressing. For deeper ginger flavor, increase to 1 1/2 tablespoons fresh ginger. A drizzle of sesame oil over the finished dish adds nutty richness.
