Ginger-Soy Chicken with Crispy Sweet Potato Matchsticks

Ingredients

  • 1½ poundschicken breast
  • 2 mediumsweet potato
  • 3 tablespoonsoy sauce
  • 1 tablespoonfresh ginger
  • 1lime
  • 3 clovegarlic
  • 4scallion
  • 2 tablespoonolive oil
  • ¼ cupwater
  • 1 teaspoonsesame oil

Prep

    Mince 1 tablespoon fresh ginger.

    Mince 3 cloves garlic.

    Slice 4 scallions into thin rounds, separating whites and greens.

    Peel 2 medium sweet potatoes and cut into thin matchsticks (or use a mandoline).

Method

    Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Season the chicken breasts with salt and pepper, then add to the pan. Cook 6–7 minutes per side until golden and cooked through (internal temperature 165°F). Transfer to a cutting board.

    Add the remaining 1 tablespoon olive oil to the same skillet. Add the sweet potato matchsticks and cook, stirring often, for 4–5 minutes until just tender and lightly crisped at the edges. Season with salt and pepper.

    Pour the soy sauce, water, and minced ginger into the skillet with the sweet potatoes. Stir to combine and simmer for 1 minute to warm through.

    Slice the cooked chicken and divide between plates with the sweet potatoes and pan sauce. Drizzle with sesame oil, squeeze fresh lime juice over top, and scatter scallion slices and minced garlic as garnish.

Spice Tips

For warmth, stir in a pinch of white pepper or a few red pepper flakes with the soy sauce. A teaspoon of rice vinegar adds pleasant tang. For more ginger heat, increase fresh ginger to 1.5 tablespoons.

Swap sesame oil for more olive oil if you don't have it on hand. For extra brightness, add a squeeze of lime juice to the pan before serving.
