Ginger-Soy Chicken with Quick-Roasted Sweet Potato Matchsticks

  • 1½ poundschicken breast
  • 1½ poundssweet potato
  • 2 tablespoonfresh ginger
  • 3 tablespoonsoy sauce

  • 2 tablespoonolive oil

    Cut sweet potatoes into thin matchsticks (roughly 1/8 inch thick).

    Mince 2 tablespoons fresh ginger and 3 cloves garlic.

    Slice 3 scallions into thin rounds.

Method

    Preheat oven to 425°F. Toss sweet potato matchsticks with 1 tablespoon olive oil, salt, and pepper on a large baking sheet. Roast for 15 minutes until starting to crisp.

    While potatoes roast, mix together soy sauce, rice vinegar, minced ginger, minced garlic, and sesame oil in a small bowl.

    Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Season chicken breasts with salt and pepper, then sear until golden, about 4 minutes per side.

    Pour ginger-soy sauce over chicken. Reduce heat to medium and simmer for 8 to 10 minutes, turning chicken once halfway through, until cooked through (internal temperature 165°F).

    Remove skillet from heat and stir in sliced scallions. Divide chicken and sauce among plates, top with crispy sweet potato matchsticks, and serve immediately.

Spice Tips

For warmth, stir 1/4 teaspoon red pepper flakes into the ginger-soy sauce. For deeper heat, add a drizzle of sriracha or hot chili oil at the end. A splash of fresh lime juice brightens the finish.
