Glazed Chicken and Sweet Potato Skillet with Thyme

Ingredients

  • 1½ poundchicken breast (boneless, skinless)
  • 1½ poundsweet potato
  • 2 tablespoonolive oil
  • 3 clovegarlic
  • ¾ cupchicken broth
  • 2 tablespoonmaple syrup
  • 1 tablespoonDijon mustard
  • 2 teaspoonfresh thyme (or 1/2 teaspoon dried)

    Cut chicken breasts into 1 1/2-inch chunks and season lightly with salt and pepper.

    Peel and cut sweet potato into 3/4-inch cubes.

    Mince 3 cloves garlic.

Method

    Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper, then add to the hot pan. Cook 4–5 minutes until golden on the first side, stirring once halfway through.

    Add sweet potato cubes and minced garlic to the skillet. Stir and cook for 2 minutes.

    Whisk together chicken broth, maple syrup, Dijon mustard, and thyme. Pour over the chicken and sweet potato.

    Bring to a simmer, then reduce heat to medium. Cover partially and cook 10–12 minutes, stirring occasionally, until the sweet potato is tender and chicken is cooked through (165°F internal temperature).

    Taste and adjust salt and pepper. Serve warm in shallow bowls with the pan glaze spooned over the top.

Spice Tips

For warmth, stir in 1/4 teaspoon smoked paprika or a pinch of cayenne pepper along with the broth. For deeper savory notes, add 1/2 teaspoon soy sauce to the glaze. A squeeze of fresh lemon or lime juice at the end brightens the maple-thyme flavor.

This comes together in about 25 minutes start to finish. The glaze thickens slightly as the potatoes cook, creating a light sauce that coats everything. Leftovers keep refrigerated for 3 days and reheat well on the stovetop or microwave.
