Creamy Dijon Chicken with Mushrooms and Thyme

Ingredients

  • 4chicken breasts (about 6 ounces each)
  • ½ teaspoonsalt
  • ¼ teaspoonblack pepper
  • 2 tablespoonall-purpose flour
  • 2 tablespoonolive oil
  • 1 tablespoonunsalted butter
  • 8 ouncecremini mushrooms
  • 1shallot
  • 2 clovegarlic
  • ½ cupdry white wine
  • 1 cupchicken broth
  • 2 tablespoonDijon mustard
  • ½ cupheavy cream
  • 1 tablespoonfresh thyme (or 1 teaspoon dried)

Prep

    Slice 8 ounces cremini mushrooms into quarters.

    Mince 1 shallot.

    Mince 2 cloves garlic.

Method

    Pat the chicken breasts dry with paper towels. Season both sides with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Dust lightly with 2 tablespoons flour, shaking off excess.

    Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Once shimmering, add chicken and cook 6-7 minutes per side until golden brown. Transfer to a plate.

    In the same skillet, melt 1 tablespoon butter over medium heat. Add mushrooms and cook 4-5 minutes, stirring occasionally, until they release their liquid and begin to soften.

    Add shallot and garlic, stirring constantly for 1 minute until fragrant.

    Pour in 1/2 cup white wine, scraping up any browned bits from the bottom of the pan. Simmer 2 minutes until slightly reduced.

    Add 1 cup chicken broth and 2 tablespoons Dijon mustard, stirring to combine. Return chicken to the skillet along with thyme.

    Bring to a gentle simmer, then reduce heat to medium-low. Cover and cook 12-15 minutes until chicken reaches an internal temperature of 165°F.

    Remove from heat and stir in 1/2 cup heavy cream. Taste and adjust salt and pepper as needed. Serve immediately over rice or egg noodles.

Spice Tips

For depth, add 1/2 teaspoon smoked paprika to the sauce. A pinch of cayenne brings subtle heat. Fresh tarragon or parsley stirred in at the end adds brightness.

Leftovers keep refrigerated for up to 3 days and reheat gently over low heat with a splash of broth. Egg noodles, rice, or crusty bread are ideal sides.
