Ingredients

  • 4chicken breasts (boneless, skinless)
  • 1 teaspoonsalt
  • ½ teaspoonblack pepper
  • 2 tablespoonolive oil
  • 6 clovesgarlic
  • 3 sprigsfresh thyme
  • ¾ cupchicken broth
  • ½ cupheavy cream
  • 1 tablespoonbutter

Method

  1. 01

Pat the chicken breasts dry with paper towels. Season both sides generously with salt and pepper.

  2. 02

Heat olive oil in a large skillet over medium-high heat. Once shimmering, add the chicken and sear for 5–6 minutes per side until golden brown. Transfer to a plate.

  3. 03

In the same skillet, add the garlic cloves and thyme sprigs. Cook for 1–2 minutes until fragrant, stirring often.

  4. 04

Pour in the chicken broth, scraping up any browned bits from the bottom of the pan. Return the chicken to the skillet.

  5. 05

Reduce heat to medium, cover, and simmer for 8–10 minutes until the chicken is cooked through (165°F on a meat thermometer).

  6. 06

Remove the chicken to a serving plate. Stir the cream and butter into the sauce and simmer uncovered for 2–3 minutes until slightly thickened. Taste and adjust seasoning.

  7. 07

Pour the sauce over the chicken and serve immediately.

Spice Tips

For a hint of warmth, add 1/4 teaspoon Dijon mustard to the cream sauce, or finish with a small pinch of fresh nutmeg. A squeeze of lemon juice brightens the flavors without adding spice.
