Spiced Chickpea & Spinach Skillet with Crispy Garlic

Ingredients

  • 3 tablespoonolive oil
  • 6 clovesgarlic
  • 1yellow onion
  • 2 tablespoontomato paste
  • 1 teaspoonground cumin
  • ½ teaspoonsmoked paprika
  • ¼ teaspoonred pepper flakes
  • 2 can (15 oz each)canned chickpeas
  • 1 can (14.5 oz)diced tomatoes
  • ¾ cupvegetable broth
  • 5 cupfresh spinach
  • ·salt and black pepper

Prep

    Thinly slice 6 cloves garlic.

    Dice 1 yellow onion.

    Drain and rinse 2 cans chickpeas.

Method

    Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add sliced garlic and cook for 1 to 2 minutes until golden and fragrant, then transfer to a small plate.

    Add the remaining 1 tablespoon oil to the skillet. Add diced onion and cook for 4 to 5 minutes, stirring occasionally, until softened.

    Stir in tomato paste, cumin, paprika, and red pepper flakes. Cook for 1 minute until the spices bloom and smell fragrant.

    Add drained and rinsed chickpeas, diced tomatoes with their juice, and vegetable broth. Bring to a simmer and cook for 5 minutes.

    Stir in spinach in batches, folding gently until wilted, about 2 to 3 minutes. Season to taste with salt and pepper.

    Transfer to bowls and top with the crispy garlic. Serve warm.

Spice Tips

For deeper warmth, add 1/4 teaspoon cayenne pepper or increase red pepper flakes to 1/2 teaspoon. A pinch of ground coriander adds earthiness. Finish with fresh lemon juice or a squeeze of lime for brightness.
