Buttered Couscous with Caramelized Onions and Thyme

Ingredients

  • 1½ cupscouscous
  • 2¼ cupsvegetable broth
  • 2 mediumyellow onion
  • 3 tablespoonbutter
  • 3 sprigfresh thyme

Method

    Melt 1 tablespoon butter in a large pot over medium heat. Add 1 1/2 cups couscous and stir constantly for 2 to 3 minutes until lightly toasted and fragrant.

    Pour 2 1/4 cups vegetable broth into the pot, add 3 sprigs fresh thyme, and bring to a boil. Season with salt and pepper to taste.

    Remove from heat, cover with a lid, and let sit for 5 minutes until the liquid is absorbed.

    Meanwhile, melt the remaining 2 tablespoons butter in a separate skillet over medium heat. Add the sliced onions and cook, stirring often, for 12 to 15 minutes until deep golden and tender (don't rush this—low, patient heat builds sweetness).

    Fluff the couscous with a fork, discard the thyme sprigs, and transfer to a serving bowl. Top with caramelized onions and any pan butter. Taste and adjust seasoning before serving.

Spice Tips

For warmth, finish with a pinch of smoked paprika or a crack of fresh pepper. A tiny grating of nutmeg stirred into the couscous just after fluffing adds subtle depth without heat.
