  • 1 mediumyellow onion
  • 3 clovesgarlic
  • 3 tablespoonsbutter
  • 2 tablespoonsall-purpose flour
  • 1½ cupswhole milk
  • ½ cupvegetable broth
  • 2 teaspoonsfresh thyme
  • ½ teaspoonsalt
  • ¼ teaspoonblack pepper
  • ½ cuppanko breadcrumbs
  • ¼ cupparmesan cheese, grated
  • 2 tablespoonsolive oil

Prep

  1. 01

Slice 12 ounces cremini mushrooms into 1/4-inch thick pieces.

  2. 02

Dice 1 medium yellow onion into small pieces.

  3. 03

    Mince 3 cloves garlic.

Method

  1. 01

Bring a large pot of salted water to a boil. Cook egg noodles according to package directions until al dente, about 8 minutes. Drain and set aside.

  2. 02

While noodles cook, heat 2 tablespoons butter in a large skillet over medium-high heat. Add mushrooms and cook, stirring occasionally, for 4 to 5 minutes until golden. Transfer to a plate.

  3. 03

Add remaining 1 tablespoon butter to the skillet. Stir in onion and cook for 3 minutes until softened, then add garlic and cook 1 minute more.

  4. 04

Sprinkle flour over the onion mixture and stir for 1 minute to create a paste. Pour in milk and broth, whisking constantly until the sauce is smooth.

  5. 05

Add cooked mushrooms, thyme, salt, and pepper. Simmer for 3 minutes, stirring occasionally, until sauce thickens slightly.

  6. 06

Toss cooked noodles into the sauce and stir gently to coat. Transfer to a baking dish or serving bowl.

  7. 07

Toss panko breadcrumbs with grated parmesan and 2 tablespoons olive oil. Scatter evenly over the noodles.

  8. 08

Broil on high for 2 to 3 minutes, watching closely, until the topping is golden and crisp. Let cool for 1 minute before serving.

Spice Tips

For earthier depth, add 1/2 teaspoon Dijon mustard when you add the milk. For a hint of heat, finish with a pinch of cayenne pepper. A splash of dry sherry or white wine in step 4 adds elegant richness.

Make ahead: prepare the mushroom sauce through step 5, cover, and refrigerate for up to 24 hours. Rewarm gently on the stovetop over medium heat, toss with cooked noodles, and finish with the breadcrumb topping just before broiling. For a protein boost, stir in 1 cup cooked shredded chicken or diced ham in step 5.
