Crispy Garlic Butter Egg Noodles with Spinach and Parmesan
Ingredients
- 8 ouncesegg noodles
- 4 tablespoonbutter
- 6 clovesgarlic
- 4 cupsfresh spinach
- ½ cupParmesan cheese

- ¼ teaspoonred pepper flakes (optional)

Bring a large skillet of salted water to a boil. Add egg noodles and cook according to package directions until al dente, about 6-8 minutes. Reserve 1 cup pasta water, then drain noodles and set aside.

In the same skillet over medium heat, melt butter. Add minced garlic and cook for 1-2 minutes until fragrant, stirring constantly to avoid burning.

Add spinach to the skillet and stir until wilted, about 2 minutes.

Return cooked noodles to the skillet. Toss well, adding pasta water a splash at a time until the noodles are glossy and coated (you may not need all of it). Season with salt and black pepper to taste.

Remove from heat, stir in Parmesan cheese, and serve immediately. Sprinkle with additional Parmesan and red pepper flakes if desired.
