Crispy Garlic Butter Egg Noodles with Spinach and Parmesan

Ingredients

  • 8 ouncesegg noodles
  • 4 tablespoonbutter
  • 6 clovesgarlic
  • 4 cupsfresh spinach
  • ½ cupParmesan cheese
  • ·salt
  • ·black pepper
  • ¼ teaspoonred pepper flakes (optional)

Method

    Bring a large skillet of salted water to a boil. Add egg noodles and cook according to package directions until al dente, about 6-8 minutes. Reserve 1 cup pasta water, then drain noodles and set aside.

    In the same skillet over medium heat, melt butter. Add minced garlic and cook for 1-2 minutes until fragrant, stirring constantly to avoid burning.

    Add spinach to the skillet and stir until wilted, about 2 minutes.

    Return cooked noodles to the skillet. Toss well, adding pasta water a splash at a time until the noodles are glossy and coated (you may not need all of it). Season with salt and black pepper to taste.

    Remove from heat, stir in Parmesan cheese, and serve immediately. Sprinkle with additional Parmesan and red pepper flakes if desired.

Spice Tips

Red pepper flakes add a gentle heat that pairs beautifully with the garlicky butter. For more depth, try a pinch of nutmeg stirred into the noodles, or finish with fresh lemon zest and a squeeze of juice for brightness.

This dish comes together in about 15 minutes. You can swap spinach for arugula or kale; tougher greens like kale should wilt for 3-4 minutes. For protein, add diced cooked chicken, crumbled bacon, or a fried egg on top.
