Charred Eggplant with Mint, Lime & Crispy Chickpeas

Ingredients

  • 1 medium, about 1.5 poundseggplant
  • 1 can (15 oz)chickpeas (drained and patted dry)
  • 3 tablespoonsolive oil
  • ·fresh mint
  • 1lime
  • 2 clovesgarlic
  • ¼ teaspoonred pepper flakes
  • ·kosher salt
  • ·black pepper

Prep

    Trim the ends from the eggplant and cut into 1.5-inch chunks.

    Mince 2 cloves garlic.

    Tear or chop a generous handful of fresh mint leaves (about 1/3 cup).

Method

    Pat the chickpeas completely dry with a paper towel. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the chickpeas in a single layer, season with a pinch of salt, and cook undisturbed for 4 to 5 minutes until golden and crispy. Shake the pan, cook another 1 to 2 minutes, then transfer to a small bowl.

    Increase heat to high. Add 1 tablespoon olive oil to the same skillet. Add eggplant pieces in a single layer and cook without stirring for 3 to 4 minutes until deeply charred on the bottom. Toss, spread into a single layer again, and cook another 3 to 4 minutes until tender and caramelized. Transfer to a serving plate.

    Add the final 1 tablespoon olive oil to the skillet. Add minced garlic and red pepper flakes, cook for 30 seconds until fragrant, then pour over the eggplant.

    Squeeze the lime juice over everything. Top with the crispy chickpeas and torn mint leaves. Season with salt and black pepper to taste and serve warm or at room temperature.

Spice Tips

For deeper heat, increase the red pepper flakes to 1/2 teaspoon or add a pinch of cayenne. A drizzle of tahini or yogurt added just before serving adds richness and cools the spice. You can also finish with a small splash of pomegranate molasses or balsamic vinegar for tanginess.

This dish is best served warm or at room temperature within an hour of cooking. It also works well as a side to grilled fish or chicken. Store leftovers in an airtight container in the refrigerator for up to 2 days and reheat gently in a skillet.
