Creamy Garlic Spinach and Eggs in Crusty Bread

Ingredients

  • 4eggs
  • 4 cupsfresh spinach
  • 3 clovesgarlic

Method

    Toast 2 thick slices of crusty bread until golden on both sides. Set aside on a plate.

    Melt 2 tablespoons butter in a large skillet over medium heat.

    Add 3 minced garlic cloves and cook for 30 seconds until fragrant.

    Add 4 cups fresh spinach in batches, stirring until wilted, about 2 minutes total.

    Pour in 1/4 cup heavy cream, stir gently, and season with salt and black pepper to taste.

    Make 4 shallow wells in the spinach mixture. Crack 1 egg into each well.
