Crispy-Edged Eggs with Charred Tomatoes and Garlic

Smash and peel 4 garlic cloves.

Halve 1 pound cherry tomatoes.

Heat 3 tablespoons olive oil in a large skillet over medium-high heat.

Add the garlic and cook for about 1 minute until fragrant, then add the cherry tomatoes. Stir occasionally and let them char and burst, about 8–10 minutes. Season with salt and pepper.

Make 4 small wells in the tomato mixture and crack an egg into each. Reduce heat to medium, cover the skillet, and cook for 5–7 minutes until the whites are set but the yolks are still runny.

Taste and adjust seasoning. Scatter fresh basil over the top and serve straight from the pan.
Spice Tips
For warmth, sprinkle red pepper flakes over the tomatoes before cooking. A pinch of smoked paprika adds depth. Finish with a squeeze of fresh lemon juice for brightness.
Serve with crusty bread to soak up the jammy tomato oil. Works just as well for a simple breakfast or light dinner. Red pepper flakes add nice heat if you like spice.
