Crispy Garlic Egg Fried Rice

Ingredients

  • 2 tablespoonsvegetable oil
  • 4 clovesgarlic
  • 3 cupscooked rice (day-old or cooled)
  • 3eggs
  • 2 tablespoonssoy sauce
  • 1 cupfrozen peas and carrots
  • 2scallions
  • ½ teaspoonsesame oil

    Mince 4 cloves garlic.

    Slice 2 scallions.

Method

    Heat 2 tablespoons vegetable oil in a large skillet over medium-high heat. Once shimmering, add the minced garlic and cook for 30 seconds until fragrant.

    Push the garlic to the side. Crack the 3 eggs into the pan, break the yolks, and scramble until just cooked through, about 1 minute. Transfer to a plate.

    Add the 3 cups cooked rice to the pan, breaking up any clumps. Stir and cook for 2 minutes until the rice is heated through and starts to toast lightly.

    Stir in the frozen peas and carrots and cook for 1 minute. Return the eggs to the pan.

    Drizzle with 2 tablespoons soy sauce and 1/2 teaspoon sesame oil. Toss everything together for 30 seconds.

    Transfer to a bowl and top with sliced scallions. Serve immediately.

Spice Tips

For a savory kick, add 1/2 teaspoon white pepper or a pinch of cayenne. For deeper umami, stir in 1/2 teaspoon fish sauce with the soy sauce. A dash of sriracha or chili oil on the side lets anyone adjust heat to taste.
