Crispy Toast Egg Sandwich with Caramelized Onions and Gruyère

Ingredients

  • 1 mediumyellow onion
  • 2 tablespoonbutter
  • ·salt
  • ·black pepper
  • 2 slicebread (sturdy white or sourdough)
  • 2 largeeggs
  • 2 ounceGruyère cheese
  • 2 sprigfresh thyme (or 1/4 teaspoon dried)

Method

    Melt 1 tablespoon butter in a skillet over medium heat. Add the sliced onion, a pinch of salt, and a grind of black pepper. Cook, stirring occasionally, for 8–10 minutes until softened and golden at the edges.

    Toast the bread slices until golden and crispy.

    Push the onions to the side of the skillet and add the remaining 1 tablespoon butter. Crack both eggs into the pan, keeping the yolks intact. Cook for 3–4 minutes until the whites are set but the yolks still jiggle slightly. Season with a tiny pinch of salt and pepper.

    Place one slice of toasted bread on a plate. Layer half the Gruyère, then one egg with some caramelized onions, then the remaining cheese. Top with the second slice of toast.

    Serve immediately, garnished with a sprig of fresh thyme. The warm egg yolk will soak into the toast as you eat.

Spice Tips

For a savory edge, add a small pinch of smoked paprika to the caramelized onions. A dash of hot sauce or a grinding of fresh nutmeg on the egg whites adds subtle depth. If you like heat, a few red pepper flakes scattered over the yolk works beautifully.
