Sheet Pan Shrimp with Tomatoes and Crispy Feta
Ingredients
- 1 poundlarge shrimp (peeled and deveined)
- 2 cupscherry tomatoes
- 6 ouncesfeta cheese
- 3 tablespoonolive oil
- 4 clovesgarlic
- 1lemon
- 1 teaspoondried oregano
- ¼ teaspoonred pepper flakes
- ½ teaspoonkosher salt
- ¼ teaspoonblack pepper

Peel and devein 1 pound large shrimp.

Mince 4 garlic cloves.

Preheat oven to 425°F.

On a large sheet pan, toss the shrimp, cherry tomatoes, 2 tablespoons olive oil, minced garlic, oregano, red pepper flakes, salt, and black pepper. Spread in a single layer.

Roast for 8 minutes until shrimp just begin to turn pink.

Meanwhile, crumble the feta into rough 1/2-inch chunks and toss with the remaining 1 tablespoon olive oil.

Remove the pan from the oven, scatter the feta over the shrimp and tomatoes, and return to the oven for 4 to 5 minutes until the feta is warm and starting to soften at the edges.

Squeeze the lemon juice over everything and serve hot.
Spice Tips
For more heat, increase red pepper flakes to 1/2 teaspoon or add a pinch of cayenne. A few fresh mint or basil leaves scattered on top just before serving add brightness and freshness.
Serve with crusty bread to soak up the pan juices, or over rice or pasta. Pairs well with a crisp white wine like Sauvignon Blanc.
