Beef and Pepper Stir-Fry with Ginger and Lime
Ingredients
- 1 poundground beef
- 3 wholebell peppers (mixed colors)

- 3 tablespoonsoy sauce

- 2 cupsjasmine rice (cooked)

Slice 3 bell peppers into 1-inch strips.

Mince 4 cloves garlic and 1 tablespoon fresh ginger.

Slice 3 green onions on the bias.

Cut 1 lime in half for juicing.
Method

Heat 1 tablespoon oil in a large skillet or wok over medium-high heat. Add ground beef and cook, breaking it into small pieces, until browned and cooked through, about 5 minutes. Transfer to a plate.

Add remaining 1 tablespoon oil to the pan. Stir in minced garlic and ginger, cooking for 30 seconds until fragrant.

Add sliced bell peppers and cook, stirring frequently, for 5-7 minutes until tender-crisp.

Return beef to the pan. Add soy sauce and fish sauce, tossing everything together. Cook for 1-2 minutes.

Remove from heat and stir in juice from 1 lime. Taste and adjust seasoning with more soy sauce or lime juice as needed.

Spice Tips
The fish sauce adds savory depth, but it's optional if you prefer a lighter touch—use 1 additional tablespoon soy sauce in its place. For more brightness, add a small handful of fresh basil or cilantro at the end. If you like heat, stir in a pinch of red pepper flakes when cooking the garlic.
