Beef & Pepper Stir-Fry with Lime and Ginger
Ingredients
- 1 poundground beef
- 3bell peppers (mixed colors)
- 1 tablespoonginger
- 3 clovegarlic
- 1lime
- 3 tablespoonsoy sauce
- 1 tablespoonrice vinegar
- 2 tablespoonvegetable oil
- 3scallions
- 1 teaspoonsesame seeds
Prep

Slice 3 bell peppers into 1-inch strips or chunks.

Mince 1 tablespoon fresh ginger.

Mince 3 cloves garlic.

Slice 3 scallions into thin rounds, separating white and green parts.
Method

Heat 1 tablespoon oil in a large skillet or wok over high heat. Add ground beef and cook for 3–4 minutes, breaking it apart as it browns. Transfer to a plate.

Add remaining 1 tablespoon oil to the pan. Add bell peppers and cook for 3–4 minutes, stirring often, until bright and slightly softened.

Push peppers to the side. Add minced ginger and garlic to the center and cook for 30 seconds until fragrant.

Return beef to the pan. Add soy sauce and rice vinegar, toss everything together, and cook for 1–2 minutes.

Squeeze in lime juice. Taste and adjust seasoning as needed.

Transfer to a serving bowl or plates. Top with sliced scallions and sesame seeds. Serve hot, optionally over steamed rice.
Spice Tips
For heat, add a pinch of red pepper flakes or a squeeze of sriracha at the end. For deeper flavor, stir in a teaspoon of sesame oil just before serving.
Serve over steamed rice or cauliflower rice for a lighter meal. Leftovers reheat well in a skillet or microwave; add a splash of water if needed.
