Skillet Ground Beef and Peppers with Garlic Rice

Ingredients

  • 1 poundground beef
  • 1yellow onion
  • 1red bell pepper
  • 1green bell pepper
  • 4 clovesgarlic
  • 1½ cupslong-grain white rice
  • 3 cupsbeef broth
  • 2 tablespoonsolive oil
  • ·salt
  • ·black pepper
  • ½ teaspoonpaprika

Prep

    Dice 1 yellow onion.

    Dice 1 red bell pepper and 1 green bell pepper.

    Mince 4 cloves garlic.

Method

    Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add 1 pound ground beef and cook, breaking it into chunks, until no pink remains, about 5 minutes. Drain excess fat if needed and transfer beef to a plate.

    In the same skillet, heat 1 tablespoon olive oil. Add diced onion and bell peppers, and cook until softened, about 5 minutes. Stir in minced garlic and 1/2 teaspoon paprika, cooking until fragrant, about 1 minute.

    Add 1 1/2 cups uncooked rice to the skillet and stir to coat with oil, about 2 minutes.

    Pour in 3 cups beef broth and return the cooked beef to the skillet. Bring to a simmer, then cover and reduce heat to low.

    Cook covered for 18–20 minutes, until rice is tender and liquid is absorbed. Remove from heat and let sit 2 minutes, then fluff with a fork. Season with salt and black pepper to taste.

Spice Tips

For warmth, stir in 1/4 teaspoon cayenne pepper when you add the paprika. A dash of Worcestershire sauce adds savory depth. Fresh cilantro or parsley scattered on top brightens each bowl.

Leftovers reheat well in the microwave or on the stovetop with a splash of water. For a twist, add diced tomatoes (fresh or canned) or a pinch of cumin.
