Crispy Beef and Potato Skillet with Fresh Herbs
Ingredients
- 1 poundground beef
- 1½ poundrusset potatoes
- 1yellow onion
- 3 clovesgarlic
- ¼ cupfresh parsley
- 2 tablespoonfresh dill
- 1lemon
- 3 tablespoonolive oil

Prep

Cut 1.5 pounds russet potatoes into 1/2-inch cubes.

Dice 1 medium yellow onion.

Mince 3 cloves garlic.

Chop 1/4 cup fresh parsley and 2 tablespoons fresh dill.
Method

Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it apart as it browns, until no pink remains, about 5 minutes. Season with salt and pepper. Transfer to a plate.

Add remaining 1 tablespoon olive oil to the skillet. Add diced potatoes and cook undisturbed for 4 minutes to let them crisp on the bottom, then stir and continue cooking until golden and tender, about 8–10 minutes total.

Return beef to the skillet. Add minced garlic and diced onion, stirring constantly, until fragrant and the onion softens, about 2 minutes.

Stir in fresh parsley and dill. Squeeze juice from the lemon over the top and toss to combine. Taste and adjust salt and pepper. Serve warm.
Spice Tips
To add warmth without heat, try 1/2 teaspoon smoked paprika stirred in with the herbs. For a pinch of spice, add 1/4 teaspoon red pepper flakes when cooking the beef, or finish with a crack of fresh black pepper.
For extra brightness, grate fresh lemon zest over the finished dish. Leftovers reheat well in a skillet over medium heat.
