Skillet Beef and Potatoes with Garlic Butter

Ingredients
- 1 poundground beef
- 1½ poundpotato (waxy, such as red or fingerling)
- 1 mediumyellow onion
- 4 clovegarlic
- 2 tablespoonolive oil
- 2 tablespoonbutter
- ½ cupbeef broth
- ·salt
- ·black pepper
- 2 teaspoonfresh thyme (or 1 teaspoon dried)

Dice potatoes into 1/2-inch cubes (no need to peel).

Dice 1 medium yellow onion.

Mince 4 cloves garlic.
Method

Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it apart with a spoon, until browned, about 5 minutes. Drain excess fat if needed. Season with salt and pepper.

Add diced potatoes and diced onion to the skillet. Stir to combine. Cook uncovered for 8 minutes, stirring occasionally.

Add minced garlic and thyme. Stir well. Pour in beef broth, cover, and reduce heat to medium. Simmer for 10–12 minutes, until potatoes are tender.
