Cilantro-Lime Ground Beef Rice Bowls
Ingredients
- 1 poundground beef
- 1½ cupslong-grain white rice
- 3 cupschicken broth

- ·jalapeño

Dice 1 medium yellow onion.

Mince 3 cloves garlic.

Juice 2 limes.

Chop a large handful of fresh cilantro.

Thinly slice 4–5 radishes.

Halve and slice 1 ripe avocado.

Slice 1 jalapeño (optional, for heat).
Method

Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it into small pieces, until browned (about 5–7 minutes). Drain excess fat if needed.

Add diced onion and cook for 2 minutes until softened. Stir in minced garlic and 1/2 teaspoon cumin; cook for 30 seconds until fragrant.

Pour in 3 cups chicken broth and 1 1/2 cups rice. Bring to a boil, then reduce heat to low. Cover and simmer for 15–18 minutes, until rice is tender and liquid is absorbed.

Remove from heat. Fluff rice with a fork and stir in juice from 2 limes and a large handful of chopped cilantro. Season with salt and pepper to taste.

Divide rice into bowls and top each with thinly sliced radishes, avocado slices, and a pinch more cilantro. Serve immediately with lime wedges.
Spice Tips
For mild heat, add diced jalapeño to the rice during the simmer. For more spice, stir in 1/4 teaspoon cayenne pepper with the cumin. A drizzle of hot sauce or a pinch of smoked paprika brightens the finish.
