Ginger-Scallion Beef and Rice Bowls
Ingredients
- 1 poundground beef
- 1½ cupsjasmine rice
- 3 cupswater
- 2 tablespoonsfresh ginger
- 3 tablespoonssoy sauce
- 2 tablespoonsrice vinegar
- 6scallions
- 3 clovesgarlic

- 1lime
- 1 teaspoonsesame oil

Mince 2 tablespoons fresh ginger.

Mince 3 cloves garlic.

Slice 6 scallions into 2-inch pieces, keeping white and light green parts separate from dark green tops for garnish.

Cut 1 lime into wedges.
Method

Bring 3 cups water to a boil in a saucepan. Add jasmine rice, stir once, reduce heat to low, cover, and simmer for 15 minutes until tender and liquid is absorbed. Remove from heat and let sit covered for 5 minutes.

While rice cooks, heat 2 tablespoons vegetable oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it into small pieces with a spoon, for 5–7 minutes until browned. Drain excess fat if needed.

Add minced ginger and minced garlic to the beef, stir, and cook for 1 minute until fragrant.

Pour in 3 tablespoons soy sauce and 2 tablespoons rice vinegar. Stir in 1 teaspoon sesame oil and red pepper flakes if using. Simmer for 2 minutes to meld flavors.

Divide cooked rice among bowls. Top with beef mixture. Squeeze lime juice over each bowl and scatter chopped scallions on top. Serve immediately.
Spice Tips
For a brighter kick, add 1/2 teaspoon white pepper or increase red pepper flakes to 1/2 teaspoon. A splash of sriracha or chili-garlic sauce stirred into the beef adds depth without overwhelming the fresh ginger notes. Fresh cilantro leaves scattered on top complement the lime beautifully.
