Sriracha-Lime Beef & Rice Skillet
Ingredients
- 1 poundground beef
- 1½ cupslong-grain white rice
- 3 cupschicken broth
- 3 tablespoonssriracha
- 2lime
- 1 mediumyellow onion
- 4 clovesgarlic
- 1 tablespoonfish sauce
- 2 tablespoonsolive oil
- 2 tablespoonssoy sauce
- ·scallions
- ·cilantro
Prep

Dice 1 medium yellow onion.

Mince 4 cloves garlic.
- 03
Chop a handful of scallions and a small handful of cilantro.
Method

Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned and cooked through, about 5–6 minutes. Drain excess fat if needed.

Add diced onion and minced garlic to the skillet. Stir and cook for 1–2 minutes until fragrant.

Add rice and stir constantly for 1 minute to lightly toast.

Pour in chicken broth, sriracha, soy sauce, and fish sauce. Stir well, scraping up any browned bits from the bottom. Bring to a simmer.

Reduce heat to low, cover, and cook for 15–18 minutes until rice is tender and liquid is absorbed.

Remove from heat. Squeeze juice from 2 limes over the rice, then fluff with a fork. Taste and adjust sriracha or fish sauce to your heat preference.

Divide into bowls and top with chopped scallions and cilantro. Serve immediately.
Spice Tips
For deeper heat, increase sriracha to 4 tablespoons or add ½ teaspoon cayenne pepper. For smoky spice, try 1 teaspoon smoked paprika. If you want it milder, reduce sriracha to 2 tablespoons and add a squeeze of honey to balance.
